Baked Lentil Tacos

Baked Lentil Tacos
Taco-size tortillas of choice (we used corn)
ooking oil of choice

Pair our Blazin' Pepper Blend cheese with your favorite taco filling for a meal to taco 'bout!

Ingredients:

  • Taco-size tortillas of choice (we used corn)
  • Cooking oil of choice
  • 1 small onion, diced
  • 1 lb. cooked lentils (homemade or store-bought)
  • 2 garlic cloves, grated or minced
  • 2 tbsp. taco seasoning
  • 1 (14.5oz) can crushed tomatoes
  • 1 cup vegetable broth
  • Hot sauce of your choice
  • 1 Seeductive Foods Blazin' Pepper Blend cheese alternative wheel
  • Cilantro, Cilantro Chutney and limes for garnish
    Directions
    1. Preheat oven to 375F.
    2. Saute onion in oil over medium heat until softened. Add your cooked lentils, garlic and taco seasoning, continue to cook for a few minutes, stirring to combine.
    3. Add a can of crushed tomatoes and vegetable broth to the lentil mixture. Let this simmer, covered, on low to medium-low heat for 10 minutes. Uncover and simmer for another 10 minutes, stirring occasionally. Add a few shakes of your favorite hot sauce, stir and set aside.
    4. Warm your tortillas - this is optional - but will prevent tearing. If you don't care, skip it! Place tortillas on a parchment-lined baking sheet.
    5. Spread Blazin' Pepper Blend Cheese Alternative on half of each tortilla. Spoon the lentil mixture on to the other half and fold over. Spray the top of your tacos lightly with cooking oil of choice and pop into the oven for 10 - 15 minutes.
    6. Remove from oven, top with cilantro and extra hot sauce or cilantro chutney. 
      Make Ahead: Make the lentil mixture ahead of time! Assemble and bake 20 minutes before you're ready to eat!
