Creamy Roasted Garlic & Olive Orzo Salad

Ingredients
1 wheel Olive & Black Garlic cheese alternative
1 cup peeled garlic cloves
1/3 cup olive oil
1/4 tsp kosher salt
1/4 tsp crushed red pepper
2 cups fresh spinach
1/2 lb orzo
Juice of 1/2 lemon

1. Add the cheese, garlic cloves, olive oil, salt and red pepper to a baking dish. Bake at 375°F for 30-45 minutes.
2. Meanwhile, boil orzo in salted water until al dente. Reserve about 1/2 cup of orzo cooking liquid before draining. Place spinach in colander first, then drain orzo over spinach to wilt. Transfer wilted spinach and orzo to a bowl and set aside while cheese and garlic are in the oven.
3. Remove baking dish from oven when it is very bubbly and the cloves are beginning to turn golden. Pour this mixture over your orzo and spinach along with 1/4 cup orzo cooking liquid. Stir, mashing up the garlic and cheese to incorporate. Add a squeeze of lemon, taste and season. Thin it out with a little more orzo cooking liquid as needed until creamy and evenly combined.
